Discovery

The baby carrots I roasted did not last very long. I decided to try regular carrots. I bought them at Costco (of course) and peeled, trimmed and prepared half of the bag. It was a lot of work. They were good. When I was about to prepare the second half of the bag, I talked to Ari, my cooking expert grandson and told him about my arduous plan. He told me carrots did not need to be peeled, just washed well. I followed his suggestion and appreciated the reduced labor and really tasty carrots. Trust the teacher!
